This week’s meal plan {2 September 2019}….

This week marks the return of routine to our lives and I’m more excited than I should be!

I’m back at work today after two weeks off work which I’m obviously sad about but at the same time, I do like routine in our lives so the fact that both kids will be back at school/college in the next week does make me happy.  Basically, I have one teenager starting college on Thursday of this week and the other is back to school next Monday but away in France on holiday this week with a friend so

Monday – Avocado on Toast

Avocado on Toast

It’s just me and teen 1 for tea tonight so I *think* we’ll have avocado on toast after the amazing brunch we had in Liverpool last week although it will probably be without the smoked salmon as that’s not particularly cheap. 😉

Tuesday – Fajitas

Fajitas is a super easy meal which we all enjoy!

Wednesday – Chicken Curry

We bought a curry spice blend from the Farmers Market last week so that’s on the menu for tea tonight I think.  We tasted a sample on the stall and it was so amazing that we couldn’t resist.

Thursday – Giant Filled Yorkshires

I’ve got some giant Yorkshire puddings in the freezer so I think I’ll see if I can hunt out some sort of stew in the freezer from a previous batch cooking session to serve in them.

Friday – Homemade Parmo

We never managed to get around to making out homemade parmo last week so we’re going to have another go this week!

Saturday – Instant Pot Chicken and Rice

Instant Pot Chicken and Rice!

You know what Saturday night means by now, right?  It’s Instant Pot Chicken and Rice night. I think we’re going to have a go at making some Nandos style flavourings this week with some Peri Peri seasoning.

Sunday – Toad in the hole

Nice and easy as well as super filling and pretty cheap so we’re loving this right now.
