I’m definitely getting back into the swing of sharing our weekly meal plans which is fantastic as it’s making me focus more on the meals we’re planning.
I’m really trying to experiment with more new recipes and this week I’m hoping to introduce two meals that we’ve never tried before – Teriyaki beef stir fry and Chicken Chimichangas.
I’ll let you know how we get on with them. 😉
Monday – Homemade pizza
This seems to be our new standard Monday meal – usually, I pick this for a Monday because I know we’ll have leftover meat from Sunday Dinner and today’s no exception as we have some gammon to use up. I don’t plan to get the kids to help make pizza dough this week as there was a layer of flour covering the kitchen surfaces when I got home last week. I’ve bought some ready-made pizza bases to make life easier.
Tuesday – Teriyaki Beef Stir Fry
This is the first of one of the new meals that we’re trying this week and I’ll be honest, I’m not sure how it’s going to turn out and how well it’s going to go down with the kids. I have Quorn crispy nuggets and crisscrosses ready for the kids if it all goes wrong. 😉
Wednesday – Gammon, egg and chips
When I started writing my meal plan, this was going to be a gammon roast dinner but partway through I remembered that we only just had a gammon roast on Sunday so I changed it up at the last minute. Instead of a roast dinner, I’ll serve this joint with a fried egg, some chips and maybe even some beans.
Thursday -Chicken Chimichangas
The second of our new recipes this week, chicken chimichangas using our Instant Pot Shredded Chicken. I’m not so sure how I’ll be making these yet but I’ll keep you updated!
Friday –Sausage Pasta Bake
Sausage and pasta pesto bake is a super easy Friday tea which involves very little effort but tastes amazing. I think I only have sun-dried tomato pesto in though so I’ll be using that instead of the basil pesto.
Saturday – Instant Pot chicken and rice
You know the score by now, right? Saturday night is always Instant Pot chicken and rice night. This week we’ll be having a full-on paella version as I bought some paella seasoning at the Farmers Market last weekend.
Sunday – Toad in the Hole
I fancy a change from the usual roast dinner this week so we’ll be having toad in the hole. I have some reduced price sausages in the freezer so it’s a great budget meal.
