If you’re interested, you can see how well I stuck to my last week’s meal plan over on The Diary of a Frugal Family as I’ve just shared what we ate last week. It was a pretty good attempt at sticking to our planned meals if you ask me but you might think otherwise. 😉
I’m struggling a bit at the moment to try and fit everything in so I know my meal plans aren’t very inspiring at the moment but I don’t want to stop posting them so I hope you’ll bear with me until I have some more interesting meals to share with you.
Here’s what we have planned for this week…
Monday – Toad in the hole
This was what we were supposed to have yesterday but we had Costco hot dogs instead so we’ve pushed this to today. We’re using chicken sausages and have some broccoli, carrots and mash to serve with it.
Tuesday – Macaroni Cheese
I could make this in my sleep and I know that the kids will love it every single time which is why it’s on our meal plan AGAIN this week.
Wednesday – Mexican Chicken Quesadillas
I make these quesadillas using our Instant Pot Shredded Chicken which has been spiced up with some Mexican spices and aside from the one time when I made them super spicy by mistake, they always go down well.
Thursday – Roasted Veg and Quorn sausages
This one is a simple traybake that my 16-year-old can put in the oven for me so it’s ready to serve when I get in from work.
Friday – Pasta Bake
I’m going for a super easy Friday night tea which involves very little effort but tastes amazing – prawn and Philadelphia soft cheese pasta.
Saturday – Instant Pot chicken and rice
Saturday night is always Instant Pot chicken and rice night. We were thinking of trying some sort of lemon and chilli kind of flavourings next so this one could go either way. Wish us luck!
Sunday – Roast Dinner
Back to a traditional roast dinner this week after last week’s hot dogs.
