I don’t want to speak too soon but I feel like our family life is pretty much back on an even keel now. My son is almost fully recovered from his burst appendix and I’ve just come back from a week away in LA with my daughter which I’ll be sharing on my travel blog over the next few weeks if you want to see what we got up to.
I’m really hoping for a quiet, drama-free end to the year which will give me chance to catch up on everything that’s fallen by the wayside recently – including my meal planning mission.
Which brings me to the point of this post – this week’s meal plan:
Monday – Fajita Chicken Pasta Bake
Not sure how this one is going to work just yet but I’m confident it’s going to be AMAZING!
Tuesday – Sweet Potato Curry and Rice
I have some frozen sweet potato in the freezer so I’m going to make a cheeky curry for us all I think.
Wednesday -Hunters Chicken
This is one of our favourite meals as a family so it features once a week on our meal plans recently.
Thursday – Homemade Pizza
I have an early finish from work of Thursday so I’ll pop some dough in the breadmaker ready for when the kids are ready for tea.
Friday – Slow cooker gammon
I’m away at the weekend so we’ll have our Sunday Dinner on Friday night I think.
Saturday – Easy Dad tea
I’ve given up trying to get my husband to cook anything outside of his very limited repertoire so I’m leaving Saturday up to him.
Sunday – Sunday Dinner
I’m sure I have a batch cooked lasagne in the freezer in the garage so that’ll be tea when I get home on Sunday!
