Corned Beef Hash in a Giant Yorkshire Pudding

Corned beef hash is one of those meals that I remember being a proper budget dinner when I was growing up. I’m sure it was the kind of thing that would make an appearance in the week before payday because it was cheap, filling and could easily feed a family.

These days though, have you seen the price of a tin of corned beef? 😂 I’ve seen it selling for as much as £4.50 a tin, which definitely takes it out of the cheap dinner category when you need two tins to make a big batch like I do.

Because of that, I tend to only make corned beef hash when I find the tins at a decent price. Our local farm shop often has really good quality corned beef for around £2.25 a tin, so whenever I spot it there I’ll pick up a couple and make a giant batch.

And when I say giant batch, I mean giant. This is one of those meals that heats up amazingly well the next day and it freezes really well too, so I always make plenty while I’ve got the slow cooker on.

What I use to make my slow cooker corned beef hash

  • 2 tins of corned beef
  • 4 biggish potatoes, peeled and chopped
  • A couple of carrots, peeled and sliced
  • 2 beef stock cubes
  • Water
  • Bisto gravy granules

How I make my slow cooker corned beef hash

This genuinely couldn’t be much easier to make.

I add the chopped potatoes and sliced carrots to the slow cooker along with the corned beef and two beef stock cubes. I then add enough water to cover everything and leave it to cook overnight.

Cooking it for that long means that the corned beef literally disintegrates into everything else, which is exactly how I like it. It doesn’t look particularly pretty by the time it’s done, but it tastes amazing. 😂

Just before we’re ready to eat, I stir through some Bisto gravy granules to thicken everything up. I don’t measure these at all, I just add a little at a time and keep stirring until the corned beef hash is as thick as I want it.

I serve mine in a giant Yorkshire pudding

My favourite way to serve corned beef hash is inside a giant Yorkshire pudding and that’s exactly how we had it for Sunday tea this week.

I used to always have a few of the ready-made giant Yorkshire puddings in the freezer for meals like this. I’m sure there was a time when you could buy about three for £1, but now I’ve seen them selling for around £1 each!

There’s no chance I’m paying £1 for one Yorkshire pudding when they’re so cheap to make, so I made my own instead for pennies. 😂

There’s just something about a giant Yorkshire pudding filled with thick corned beef hash that makes a very basic meal feel like proper comfort food.

It makes a good few meals too

One of the reasons I make such a big batch is because it doesn’t just feed us for one meal.

We had ours in giant Yorkshire puddings for Sunday tea and there was still enough left for my partner to take some for his packed lunch on Monday and for me to have some for my lunch too.

It reheats really well the next day, and if there’s more left than we’re going to eat then I’ll portion it up and pop it in the freezer for another day.

Corned beef hash might not be the super-cheap meal that I remember it being when I was younger, especially with the price of corned beef these days, but buying the tins when I spot them at a good price and making a big batch means I can still get a good few meals from it.

And it might not be the prettiest meal I’ve ever shared, but I’ll take ugly food that tastes amazing any day. 😂
