It’s only half a meal plan this week as I’m away on Friday for the weekend on a hen weekend so I’ve planned the meals for when I’m here and will let the kids fend for themselves at the weekend when I’m gone.

I didn’t do too well with sticking to my meal plan last week as it was a bit of a mad week but I did manage four out of seven days which I’ll take based on everything I had going on.  I’ve got high hopes for this week though…

Monday – Lemon chicken and rice for tea as I have some crispy chicken balls in the freezer and some lemon sauce in the cupboard so totally taking a shortcut to an easy meal to start the week off.

Tuesday – Super simple avocado on toast for tea on Tuesday as we have a busy night so just going for something quick and easy.

Wednesday – I’m planning a midweek roast seeing as we won’t be having one at the weekend. I’m probably just going to do chicken breasts rather than an actual roast.

Thursday – One-Pot chicken Couscous which is something I make at least once a week as it’s so flexible. Last week I used some of the batch cooked arrabbiata sauce to spice it up a little bit and it changed the whole dish massively, taking it up to the next level.

Lunches will be freezer portions of Chicken Tikka Soup, Instant Pot Ham, potato and sweetcorn chowder, Greggs fakeaway Bacon and cheese wraps and some kind of soup.
