Homemade Tomato Soup Recipe
5 large tomatoes, preferably the ones you can get that are still on the vine
2 tablespoons tomato puree
3 cloves of garlic
About 200-300ml vegetable stock
Preheat the oven to around 200 c.
Chop the tomatoes into quarters and add them into a baking dish.
FInely chop the cloves of garlic and add them into the baking dish.
Season and drizzle with olive oil (of Frylight if you’re being healthy)
Roast for around 15-20 minutes.
Transfer them to a blender along with any of the cooking juices.
Start adding the vegetable stock to the blender bearing in mind that the amount you’ll need varies each time you make it so start with around 200ml and be prepared to add more. The reason it changes each time is that it depends how soft your tomatoes are, what consistency you like your soup and even how far you want to stretch your soup.
Garnish with some parsley if you’re posh and serve with some crusty bread.
This does freeze really well but ours has only ever made it to the freezer for me to confirm if it freezes well or not. 😉
