Christmas Dinner leftovers are one of the best parts about Christmas if you ask me!
There are so, so many ways to use up your Christmas Dinner Leftovers and you’ll all probably already have your favourites (which I’d love to hear about in the comments) but I thought I’d share a few of our favourites with you today just in case you need a bit of inspiration…

A good old Christmas Dinner Leftovers sandwich is my first choice every single time. A lovely baguette filled with some slices of meat, potatoes, stuffing and whatever else you have leftover and topped with some gravy is the perfect Boxing Day tea. You can’t beat it!
This Savoury Puff Pastry Christmas Leftovers Tree is the perfect way to use up your leftovers. The first time couple of times I made this, I went all fancy and cooked the leftovers together before I put the pastry tree together but these days I just blob a bit of everything I have leftover on there and top the finished bake with some gravy. 😂

You could make a risotto with your leftover meat and then stretch that even further by making your leftover risotto into Riso al Salto.
Leftover turkey, chicken and gammon are all amazing in variations of my Instant Pot Chicken and Rice or my Potato and Corn Chowder.

Your leftover mashed potato is perfect for cheesy mashed potato cakes which can totally be adapted to use up whatever you have left or you could just go for the good old bubble and squeak which is one of those dishes that always makes me think of Christmas when I was growing up. If you don’t know what bubble and squeak is, it’s basically your leftover mash roughly mixed with your leftover veggies made into little burger shapes and fried until it’s cooked through. They’re perfect with some leftover meat and a fried egg – although that could just be me.
You can make a batch of my little breakfast egg muffins – broccoli, gammon and potato is THE perfect combination and is worth keeping some back just to make these!
Usually, when I get bored of being creative with leftovers, I’ll just add whatever leftover meat we have left into a big batch of homemade curry which pretty much signifies the end of Christmas to us! When we have our Christmas curry, we’re ready to get back to normal and start our New Year Planning!
