If you’re wondering where I am, I’m in the corner hanging my head in shame as I haven’t shared a weekly meal plan in months. I have been (vaguely) planning our meals but the plan itself has been in my head which is never a good idea.

So, I’m back with this week’s menu plan and hopefully am here to stay to see if I can get myself well and truly back on track because let’s face it, if I don’t plan then it all goes a bit wrong more often than not!

Monday – Actifry Fajitas are super easy to make and super healthy. I basically just throw chicken fillets in the Actifry with some sliced peppers, red onion and fajita spice with some Frylight spray and leave the Actifry to do it’s thing for 15 minutes. I serve with wraps for the kids and rice for me usually.

Tuesday – Minced Beef and onions which I’ll either make in the Instant Pot or the slow cooker depending on how organised I am before I go to work on Tuesday. 

Wednesday – Chicken Paramgiana which I’ve never made before but I think it’s just chicken in breadcrumbs in a tomato-based sauce. I’ll let you know how I get on. 😇

Thursday –  Instant Pot Chicken and Rice which is always a go-to recipe for me as it’s so easy and tasty and I basically just put in whatever I have in that needs using up.

Friday – Avocado on Toast

Easy Crab, Lemon and Chilli Tagliatelle

Saturday – Crab and Lemon Spaghetti which is something I haven’t had in ages but it’s such a Summery recipe that it’s definitely back on the menu.

Sunday – Sunday dinner with whatever meat is on offer when I go shopping

Lunches will be freezer portions of Chicken Tikka Soup, Instant Pot Ham, potato and sweetcorn chowder, Greggs fakeaway Bacon and cheese wraps and some kind of soup.
