I’ve tried to pull myself out of my meal planning rut with this week’s menu with a couple of meals that I haven’t cooked for a while now. 😇

So, I’m back with this week’s menu plan and hopefully am here to stay to see if I can get myself well and truly back on track because let’s face it, if I don’t plan then it all goes a bit wrong more often than not!

Monday – Crab and Lemon Spaghetti is one of my favourite Summer meals as it’s so light and fresh as well as being ridiculously simple to cook.
Tuesday – Dirty Fries and Cajun chicken

Wednesday – Prawn Pasta with Arrabbiata Sauce which is on the menu mainly because I’m batch cooking a big pan of my homemade Arrabbiata sauce this afternoon so I’ll keep a portion out of the freezer ready for this.
Thursday – One-Pot chicken Couscous which if I get the chance, I’ll share on here as it’s something I make all the time these days because it’s so easy and healthy.
Friday – Avocado on Toast with poached eggs

Saturday – I’m making fakeaway homemade chicken parmo for tea on Saturday night as it feels like it’s going to be a long week this week and I know I’ll be craving a takeaway by the time the weekend rolls around.

Sunday – Sunday dinner which I think will be Minced Beef and onions which I’ll either make in the Instant Pot or the slow cooker.
Lunches will be freezer portions of Chicken Tikka Soup, Instant Pot Ham, potato and sweetcorn chowder, Greggs fakeaway Bacon and cheese wraps and some kind of soup.
